Autumn is officially here and what better way to start off the season of the harvest than with a delicious, fall-inspired roasted delicata squash with chili lime honey dressing? It isn't just the flavourful taste that makes this simple dish a fall + winter favourite but also the incredible health benefits.
Delicata squash is a great source of potassium, fiber & contains magnesium and vitamin C.

| Vegetarian | Gluten Free | Serves 4 | Total Time: 45 minutes | Opt for Organic Ingredients
Ingredients: • 1 Delicata Squash • 1-2 tablespoons Olive Oil • 1 tablespoon Honey • Grated Fresh Pepper to taste • Garlic spice to taste • Chili Powder to taste • 1/3 cup white whine / champagne vinegar • Golden raisins / cranberries / pine nuts • Fresh parsley • Pink salt to taste • 1 Juicy lime
Step One: Wash then slice the squash into about 3/4 quarter pieces.
Step two: Deseed + scoop out the insides with a table spoon, scraping the edges for a clean finish.
Step Three: Season with 1-2 tablespoons of olive oil, 1 tablespoon of honey, a little grated fresh pepper + garlic & a touch of chili powder if you like a little kick!
Step Four: Mix and lay flat on the baking sheet. Roast for 15-20 minutes at 375 degrees, flipping over once when they are a golden brown tone.
Step Five: For the refreshing light sauce/dressing, mix or simmer 1 juicy lime (or 2 if not as juicy), a tablespoon of honey, 1/3 cup of white wine or champagne vinegar. Add a touch more chili.
Step Six: Dress with golden raisins, cranberries or pine nuts (whatever you like) + fresh parsley and course pink salt to taste.
Voila! Dinner is served!
